Kiwi fruit is one of my favorite summertime fruits, but trying to prepare it to eat used to frustrate the heck out of me. I tried peeling it with a small knife while still whole or slicing it and peeling each individual slice, but both of these are time consuming. My frustration meant that we didn't eat it very often, especially since they're so small and don't yield much fruit as it is.
However, since I've discovered the easy way to do it, it's back at the top of our list of favorite summertime fruits, and I prepare it much more often and more of it at a time:Start with a small cutting board, large spoon and sharp knife.
Next, cut the ends off of the kiwi and stand it on one end.
Cut the kiwi in half lengthwise. I prefer to cut it across the widest part of the fruit because it makes the next step easier.
Make two diagonal cuts to cut a "V" from the center of the fruit and remove the core (Do kiwis have cores? Whatever. To remove the hard white center.)
Now, here's the fun part. Take your spoon and slide it between the skin and the flesh of the fruit. If your kiwi is ripe, it should slide in easily to peel the skin off. Simply slide it all the way through to remove the skin.
Voila! You now have two halves of kiwi ready to be sliced, diced or simply eaten as is (Okay, okay, I have one half and two quarters in my picture; it was VERY ripe and separated at the point of the "V", but I was slicing them anyway, so that was okay).

I normally just eat mine with a spoon like a grapefruit, but I may have to try this!

I love Kiwis. You can eat the outside of these yummy fruits. We usually dice ours into a fruit salad.
